With time, the panpepato did not undergo great changes, until the year 1879, when Margherita di Savoia, the Queen of Italy, went on a visit to Siena.
For the occasion, a pastry chef prepared a panpepato with a vanilla and sugar coverage, instead of black pepper. The Sienese offered it to the Queen as "Panforte Margherita", the name by which this "white", more delicate panforte, is still known and marketed.
