Eggs, a highly proteic and cheap food, are an ingredient in innumerable recipes: hand-made pasta, sauces, cakes.
Sometimes, however, eggs become the main ingredient, as for the Easter morning in Italy, or the fast, always popular frittate, or the energetic zabaione (or uovo sbattuto, fresh yolks beaten with sugar), a common tonic preparation of times gone by.
