Italian Recipes for Pizza
Pizza is perhaps the most famous Italian word and, together with pasta, the best known Italian food in the world. It is a savory product made with a dough of flour, water and yeast, that is flattened and seasoned typically with tomato, mozzarella and other ingredients, and baked in a wood oven.
Originating in Neapolitan cuisine, the pizza was practically unknown beyond the Neapolitan urban area in the 18th century, when in the rest of Italy a pizza was a sweet cake. From the early 19th century in Naples pizza took on its current connotation and was exported worldwide, so much so that in 2017 UNESCO declared the art of Neapolitan pizza maker as an intangible heritage of humanity. This index includes also similar street-food recipes, as the piadina and pizza fritta.
