Italian Recipes of Pasta

Pasta is a flour-based product, typical of the various regional traditions, cut into regular shapes and cooked in boiling water and salt. The term pasta as referred to the first course is actually an abbreviation of the Italian pastasciutta, where pasta is the main ingredient accompanied by a tomato sauce or other seasoning.
The Italian pasta - not to be confused with the Chinese one - differs according to format and region (the Emilian sfoglia, timballi and lasagne to be baked, the ubiquitous spaghetti, macaroni, then Ligurian, Apulian, Sicilian varieties etc.). This always beloved course has spread throughout Europe, the Americas and Australia, often brought there by Italian emigrants.
