A Minestra (= soup) is a liquid-based first course, typical of the normal weekly family menu. Originally, the minestra was a poor dish typical of rural populations, which was however enriched and elaborated on festive occasions.
In most areas of Italy, a minestra can vary from a simple vegetable soup to more elaborate preparations. Due to its pleasantness to the palate and its relative greater affordability compared to meat dishes, it has also spread widely in other European and North American countries, especially thanks to Italian emigrants.
