Mozzarella in Carrozza recipe

Mozzarella in CarrozzaThis recipe is said by some from Campania and by others as Roman. It was a way in the past to use the stale bread in a creative, appetizing and nutritious way. There are many variations, anchovies or ham can be added. The version in the video here uses the loaf bread, but the best is definitely a stale, farmhouse bread because it absorbs little oil.

As to the name, the origin is unclear: some derive it from the fact that milk, when transported in horse carriages, became cheese; another version is that the mozzarella is inside the bread as in a carriage, and still another from the melting of the mozzarella, similar to bridles.

Ingredients: brrad, mozzarella, milk, eggs, flour, salt, pepper, extra virgin olive oil.

Farina per impanare quanto basta, olio [di oliva extravergine] per friggere, 100 ml di latte, 400 grammi di mozzarella di bufala tagliata a fettine, 3 uova, sale e pepe quanto basta e sedici fette di pane in cassetta. Mi raccomando, non per tramezzini.
